Clinton County Restaurants Inspected – Wilmington News Journal

The following information is obtained from the Clinton County Health Department and is compiled from inspection reports.

Violations are either critical or non-critical. Serious violations are more likely to contribute to food contamination, illness, or an environmental health hazard, including improper cooking of food or poor personal hygiene.

China Dragon Blanchester, 103 E. Main St., Blanchester, Jan. 27.

Critical: The rice on the counter used for fried rice is 72°F. All TCS (Time/Temperature Control for Safety) foods should be kept hot at 135°F or cold at 41°F. Please discard and use cold rice or hot rice to cook. Nothing in the coding units/fridges is marked with a date — Walk-in cooler: nothing dated; 2-door refrigerator in the kitchen: Nothing dated. Preparation cooler in the kitchen: nothing dated. All foods must be properly labeled and dated for use within 7 days or foods must be discarded. Crayfish frozen on the counter at room temperature. Chicken in the center 3 sink compartment with a small trickle of water running over the center pieces. Shrimp colander sitting on 3 compartment sink tray. Food should be thawed in one of the following ways: under continuous cold running water; in the refrigerator; or, in the microwave during the cooking process. The floors in the property are dirty and there are broken tiles.

Critical: No verification available for employee sickness reports. Sour cream on salad prep was 44°F. Chicken fillets on bottom of unit 45°F. All TCS (Time/Temperature Control for Safety) foods should be kept cold at 41°F or less. In the cold room, the following items were undated: spaghetti, cups of cheese, onions, lettuce, and an open bag of chicken.

Non-critical: No emesis/diarrhea cleanup procedure is displayed. Employee with facial hair and no hair restraint. The cold room door does not close properly. Personal belongings of employees (handbag) stored on a bread rack with boxes of bread. Starbucks cup with liquid stored on tray with bag of chicken open.

Critical: Disinfectant in use buckets/containers without name labels. Chemicals must be labeled to prevent misuse (catering service). Test results for the bulk water machine are not available. Semester test results must be available upon request. Responsible person contacts water company for results.

Non-critical: Hand washing sign missing at the sink in the fruit and vegetable section. Thermometers unavailable in equipment storing TCS (Time/Temperature Control for Safety) food (meat crate, take-out, fruit and vegetable crates, etc.). Cloths used under clean equipment. Clean equipment should be stored on surfaces that can be cleaned and disinfected (product department). Heat lamp bulbs (6) that are not working in the hot deli box. Critical: Missing asterisks on menu items to which the consumer advisory applies; menu items that are available to be prepared and served rare or undercooked asterisk to notify the consumer. Responsible person identified and will update the menu. Missing name tag for sanitizer bucket. PIC corrected.

Non-critical: Air-dry pitcher and ice cream scoops between uses stored on a cloth. Clean equipment should be stored on surfaces that can be washed, rinsed and disinfected. Corrected.
